Can Ràfols dels Caus sits in the Massís del Garraf, a rugged limestone landscape that the winery calls unlike anything else in Catalonia. Carlos Esteva moved to his grandfather's farm in 1979 and became one of the pioneers of single-site, local-grape wine; he died in 2023. Xarel·lo Pairal has been made since the 1999 vintage and is a broad, enveloping white with a chalky, mineral grip; it has held up well for two decades in older vintages. The estate also makes Sumoll, handled with a low-extraction approach since 2008, giving a restrained, earthy red. The winery runs four visit formats, including a breakfast visit, which makes it one of the more serious stops for people who want to see where Xarel·lo and Sumoll can reach.

Growers now bottle old Xarel·lo vines separately and revive Sumoll, Malvasia de Sitges and Montonega. The result is more local, less international.
For decades Penedès made a name with Cava and, in a few estates, international grapes such as Chardonnay and Cabernet. The big change this century has been a return to local varieties and specific sites. Xarel·lo, the most expressive local white, is now bottled as still wine from single old plots, such as Can Ràfols dels Caus's Pairal and Alemany i Corrió's Principia Mathematica. Sumoll, a red grape once dismissed as rustic, is being made into light, earthy reds. Malvasia de Sitges, nearly lost, appears in Pardas's Blau Cru and in the Raventós i Blanc Blanc de Blancs. Recent vintages are also leaner, with lower alcohol and less new oak than a generation ago. For the buyer this means the interesting bottles are often from small growers, not the famous names.

Gramona works land in the Anoia and Bitlles valleys near Sant Sadurní and has been in the same family since the mid-19th century; the fifth and sixth generations run it now. The estate follows organic and biodynamic principles, including horse ploughing, and treats Xarel·lo as the backbone of its sparkling wines. Its Corpinnat range has a clear ladder. III Lustros is the dry, austere Gran Reserva: fine bubbles, light toast, a long finish, and the most reserved of the Gramona line. Celler Batlle is the house's single-site vintage wine. Older vintages of Celler Batlle Font de Jui and the Enoteca Brut Nature are worth looking for. The family also makes still and sweet wines, such as Gessami and Mustillant.

Recaredo is a family of winegrowers in Sant Sadurní d'Anoia and one of the Corpinnat founders; its president, Ton Mata, leads the group. The house only makes vintage Brut Nature, meaning no sugar added at the end. Farming is organic and biodynamic and dry-farmed, harvests are by hand, and the wines age under natural cork for years before each bottle is disgorged by hand. The range climbs from Terrers, the clean introduction, through Intens Rosat, a Brut Nature rosé, and Subtil, to the single-site Serral del Vell, Reserva Particular and the top Turó d'en Mota. The cellars are open to visitors by booking, and it is a good first stop if you want the extreme, dry side of Penedès.

Paraje Calificado (Paratge Qualificat in Catalan) is Cava's highest rung: a single estate with a distinctive soil and microclimate, made, aged and bottled on site, with extra checks and a tasting panel. Only a few houses have earned it. Codorníu's Ars Collecta has three bottlings from separate sites (La Fideuera, La Pleta and El Tros Nou); Juvé & Camps has La Capella; Can Sala, from the Ferrer and Freixenet side, is on the list; Pere Ventura, Sumarroca, Vins El Cep and Carles Andreu also appear on the list. The wines are rare and priced like Champagne's lower prestige tier, but you can buy them on the spot in Sant Sadurní. For a traveller, they are the best way to taste what single-vineyard Cava can be.

The Raventós family planted vines in Sant Sadurní in 1497 and helped invent the Cava style; Raventós i Blanc was founded in 1986. In 2012 Pepe Raventós left the Cava DO, arguing that it paid too little attention to terroir, and later declined to join Corpinnat as well, creating Conca del Riu Anoia instead. The 50-hectare estate is split into 44 plots, farmed biodynamically with horse ploughing and native grapes only. The Blanc de Blancs blends Macabeu, Xarel·lo, Parellada and the rescued Malvasia de Sitges. De la Finca comes from Vinya dels Fòssils, with vines from an 1888 selection, and carries saline, lemon and fennel notes. Textures de Pedra is a Blanc de Noirs from Vinya Més Alta, using Xarel·lo Vermell, Sumoll and Bastard Negre. De Nit is the pale sparkling rosé. The family also runs Can Sumoi, a newer estate in Baix Penedès.

Josep Mitjans runs about 40 hectares and makes both sparkling and still wines. 109 Reserva Brut Nature is the showpiece; A Pèl is the wild entry.
Loxarel is based in Vilobí del Penedès at Masia Can Mayol, where Josep Mitjans started in 1985 and moved the family from bulk wine to quality. The estate farms around 40 hectares across limestone soils at lower levels and clay-rich ones at El Pla de Manlleu, went organic in the early 2000s and later biodynamic. About half of its production is sparkling and half still. The 109 Reserva Brut Nature takes its name from the 109 months it spends ageing in an old anti-aircraft shelter. Refugi is the easy entry, and Reserva Familiar the mid-range bottle. Mitjans was one of the first in Catalonia to use terracotta amphorae, and A Pèl is his skin-contact, no-sulphite Xarel·lo for people who want a wilder, more textured white. The sparkling wines are sold as Clàssic Penedès.

Who grows the grapes matters: estate-grown fruit and own base wine mark the top houses.
The grower-led movement here is about control. Houses that farm their own vines and make their own base wine decide everything from harvest date to blend, rather than buying wine in.
Much Cava is built from bought-in grapes or base wine, which suits volume and a consistent house style. The Penedès producers who left for Corpinnat, Clàssic Penedès or their own labels did so partly to tie their sparkling wine to named land and to their own cellar work. Corpinnat houses grow or closely control their grapes and make their own base wines; Raventós i Blanc takes this furthest, using only its own estate fruit and local grape varieties. For a buyer the signal is practical: a producer that farms its own vineyards, hand-harvests, and ages for years is far more likely to deliver depth for the money than a brand built on volume. It also explains why the same Xarel·lo can taste so different from one grower to the next.

Can Ràfols dels Caus sits in the Massís del Garraf, a rugged limestone landscape that the winery calls unlike anything else in Catalonia. Carlos Esteva moved to his grandfather's farm in 1979 and became one of the pioneers of single-site, local-grape wine; he died in 2023. Xarel·lo Pairal has been made since the 1999 vintage and is a broad, enveloping white with a chalky, mineral grip; it has held up well for two decades in older vintages. The estate also makes Sumoll, handled with a low-extraction approach since 2008, giving a restrained, earthy red. The winery runs four visit formats, including a breakfast visit, which makes it one of the more serious stops for people who want to see where Xarel·lo and Sumoll can reach.

The Raventós family planted vines in Sant Sadurní in 1497 and helped invent the Cava style; Raventós i Blanc was founded in 1986. In 2012 Pepe Raventós left the Cava DO, arguing that it paid too little attention to terroir, and later declined to join Corpinnat as well, creating Conca del Riu Anoia instead. The 50-hectare estate is split into 44 plots, farmed biodynamically with horse ploughing and native grapes only. The Blanc de Blancs blends Macabeu, Xarel·lo, Parellada and the rescued Malvasia de Sitges. De la Finca comes from Vinya dels Fòssils, with vines from an 1888 selection, and carries saline, lemon and fennel notes. Textures de Pedra is a Blanc de Noirs from Vinya Més Alta, using Xarel·lo Vermell, Sumoll and Bastard Negre. De Nit is the pale sparkling rosé. The family also runs Can Sumoi, a newer estate in Baix Penedès.

The grower-led movement here is about control. Houses that farm their own vines and make their own base wine decide everything from harvest date to blend, rather than buying wine in.
Much Cava is built from bought-in grapes or base wine, which suits volume and a consistent house style. The Penedès producers who left for Corpinnat, Clàssic Penedès or their own labels did so partly to tie their sparkling wine to named land and to their own cellar work. Corpinnat houses grow or closely control their grapes and make their own base wines; Raventós i Blanc takes this furthest, using only its own estate fruit and local grape varieties. For a buyer the signal is practical: a producer that farms its own vineyards, hand-harvests, and ages for years is far more likely to deliver depth for the money than a brand built on volume. It also explains why the same Xarel·lo can taste so different from one grower to the next.

Growers now bottle old Xarel·lo vines separately and revive Sumoll, Malvasia de Sitges and Montonega. The result is more local, less international.
For decades Penedès made a name with Cava and, in a few estates, international grapes such as Chardonnay and Cabernet. The big change this century has been a return to local varieties and specific sites. Xarel·lo, the most expressive local white, is now bottled as still wine from single old plots, such as Can Ràfols dels Caus's Pairal and Alemany i Corrió's Principia Mathematica. Sumoll, a red grape once dismissed as rustic, is being made into light, earthy reds. Malvasia de Sitges, nearly lost, appears in Pardas's Blau Cru and in the Raventós i Blanc Blanc de Blancs. Recent vintages are also leaner, with lower alcohol and less new oak than a generation ago. For the buyer this means the interesting bottles are often from small growers, not the famous names.
